There are so many different kinds of wrapping paper. Most wrapping paper is unsuitable. Especially if it's plasticy, don't go for it. But some wrapping is really good. In Germany, for example, you can get wrapping paper that's Kraft paper. It's excellent to work with, is duo colour, super cheap - what else could you wish for? So the answer is: "It depends". Try creasing a small corner. That one test crease can show you whether the paper is suitable for your project or not.

I can't find a mention of a "marked star" in the video. Do you mean the diamond shape? You need to make all the precreasing I breeze through in the beginning, then you should have all the creases necessary. I agree that the model isn't explained as well as it should have been, but with a bit of patience I think you can master it.
